Chef and owner Satoshi Makise opened Tetsu in 2017 inside the Times Square Suites hotel near Denman and Robson streets. The name comes from a character his family has carried in its names for generations. The sushi follows the Edomae style with a modern twist, and seasonal Japanese appetizers come before it.
The sushi bar omakase costs $240 at 5:30 pm or 8 pm, and a table at 5 pm or 7:45 pm costs $220. Both bring five or six seasonal appetizers and about 13 pieces of sushi before tamago and dessert. Michelin's inspector singles out the aged and smoked goldeneye snapper and the bigfin reef squid with yuzu among the nigiri. An à la carte menu runs beside the omakase, and its seared amberjack tataki costs $30 for five pieces.
