L'Abattoir opened in 2010 in a restored heritage building on the site of Vancouver's first jail, and Michelin places it beside Blood Alley and Gaoler's Mews. Executive Chef Jasper Cruickshank and Chef de Cuisine Baker Hsu put French technique to work on West Coast ingredients. Most diners sit up on the mezzanine. The kitchen is nut-free.
The chef's tasting menu costs $140, and beverage pairings add $95. The kitchen will build it for vegetarians or pescatarians, and it declines other changes on that menu. À la carte, the baked Pacific oysters with garlic butter and black truffle cost $9 each and $52 for six, and Michelin's inspector rates them. Wild BC halibut with potato gnocchi runs $58.
The restaurant calls its bar one of the most celebrated in the city, and bar manager Alexa Gervais runs the cocktail list. Happy hour runs from 5 pm to 6 pm Tuesday to Saturday and all evening on Wednesday. Martinis cost $10 then, and house cocktails come $2 off. The Le Royal burger ($28) is served only at the bar.
